Ingredients (homes):
- 120 grams (weight) whole wheat flour, about 1 cup
- 120 grams (weight) enriched all-purpose flour, about 1 cup
- 141 grams (weight) sugar, about 3/4 cup
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 large egg (OR 50 grams (weight) liquid eggs) OR for vegan, mix 1 Tablespoon flaxseed meal with 3 Tablespoons water
- 244 grams (weight) applesauce (about 1 cup)
- 1 stick butter/margarine (1/2 cup) - use margarine for vegan
Ingredients (centers):
- 480 grams (weight) whole wheat flour, about 4 cups
- 480 grams (weight) enriched all-purpose flour, about 4 cups
- 564 grams (weight) sugar, about 3 cups
- 2 Tablespoons + 2 teaspoons baking powder
- 1 Tablespoon + 1 teaspoon cinnamon
- 1 teaspoon salt
- 4 large eggs (or 200 grams (weight) liquid eggs) OR for vegan, mix 1/4 cup flaxseed meal with 3/4 cup water
- 976 grams (weight) applesauce (about 4 cups)
- 1 pound (weight) butter/margarine (4 sticks) - use margarine for vegan
Directions:
- Line muffin tin(s) with muffin cups OR coat with nonstick spray.
- Whisk dry ingredients in a large bowl(s).
- Mix in remaining ingredients until a toothpick comes out clean, about 20-25 minutes.
Serve:
1 muffin = 1 oz. eq. whole grain
