Baked Cherry Oatmeal (WG)

Ingredients (homes):
- 162 g. Old Fashioned Oats (about 2 cups)
- 26 g. Ground Flaxseed OR liquid eggs (about 1/4 cup)
- 47 g. Sugar (about 1/4 cup)
- 1/2 teaspoon EACH Apple Pie Spice, Vanilla, and Almond Extract (use imitation for nut allergies)
- 2 cups Water
- 2 cups Applesauce
- 2 pounds Sweet Cherries, frozen
Ingredients (centers):
- 365 g. Old Fashioned Oats (about 4 1/2 cups)
- 59 g. Ground Flaxseed OR Liquid Eggs (about 1/2 c. + 1T.)
- 106 g. Sugar (about 1/2 c. + 1 T.)
- 1 1/8 teaspoons EACH Apple Pie Spice, Vanilla, and Almond Extract (use imitation for nut allergies)
- 4 1/2 cups Water
- 4 1/2 cups Applesauce
- 4 pounds 8 ounces Sweet Cherries, frozen
Directions:
- Spray pan(s) with nonstick spray.
- Place all ingredients in pan(s). Stir to mix.
- Bake at 400 degrees F until bubbly, about 45 minutes for a 9 x 13" pan.
Serve:
1 cup (#4 scoop) counts as 1 oz. eq. whole grain and 1/2 cup fruit (for ages 3+ at breakfast).
For ages 1-2, serve 1/2 cup (#8) scoop to count as 1/2 oz. eq. whole grain and 1/4 cup fruit at breakfast.
