Basic Bread (WG)
Makes (homes):
1 loaf (up to 22 slices)
1 (9 x 5") loaf pan

Ingredients (homes):
- 1 cup warm water (100-110°F)
- 3 Tablespoons sugar
- 1 packet (2 1/4 teaspoons) rapid rise yeast
- 3 Tablespoons oil
- 1 1/2 teaspoons salt
- 188 g (about 1 1/2 cups) enriched all-purpose flour
- 180 g (about 1 1/2 cups) whole wheat flour, use white whole wheat for better flavor
Ingredients (centers):
- 1 quart warm water (100-110°F)
- 3/4 cup sugar
- 4 packets (3 Tablespoons) rapid rise yeast
- 3/4 cup oil
- 2 Tablespoons salt
- 752 g (about 1 quart + 1 pint) enriched all-purpose flour
- 720 g (about 1 quart + 1 pint) whole wheat flour, use white whole wheat for better flavor
Directions:
- Mix water, sugar and yeast.
- Pour into the bowl of a mixer with a dough attachment. (You can also use a 1-gallon ziploc baggie to "mix" each loaf.)
- Add oil, salt, and flour(s). Mix on low speed for 8-12 minutes OR seal bag and knead until well blended.
- Place in greased pan(s).
- Let rise for 30 minutes.
- Bake at 375°F for 25-30 minutes or until golden brown. Cool and slice.
Serve:
1 slice counts as 1 oz. eq. whole grain.
