Carribean Rice & Beans

Ingredients (homes):
- 1 cup white rice, enriched (about 3.5 oz by weight)
- 2 (15.5 oz.) cans kidney beans, drained, rinsed
- 1 (14.5 oz.) can diced tomatoes
- 2 Tablespoons EACH oil and minced garlic
- 2 teaspoons EACH turmeric, thyme and cumin
- 1 1/2 teaspoons salt (or to taste)
- 2 cups water (add more if needed)
Ingredients (centers):
- 1 pound 13 ounces (by weight) white rice, enriched
- 2 (108 oz.) + 1 (30 oz.) cans kidney beans, drained, rinsed
- 1 (102 oz.) + 1 (14.5 oz.) can diced tomatoes
- 1 cup EACH oil and garlic
- 1 1/4 cup + 1 Tablespoon EACH turmeric, thyme and cumin
- 1/4 cup salt (or to taste)
- 1 gallon water (add more if needed)
Directions:
- Mix all ingredients in a pot or rice cooker/instant pot.
- Rice cooker instructions: Set on "white rice" setting (about 40 minutes).
- Stove top directions: Bring to a boil. Cover. Reduce heat to low. Simmer 20 minutes. If needed, add additional water.
Serve:
1 cup counts as 1.75 oz. eq. meat alternate and 1/2 oz. eq. grain.
