Ingredients (homes):

  • 2 1/4 cup White Whole Wheat Flour
  • 2 cup + 2 TBSP. All Purpose Flour, enriched
  • 1/2 cup + 1 TBSP. Dry Milk, instant, nonfat
  • 1/4 cup Sugar
  • 1 TBSP. + 1 tsp. Yeast, instant, dry
  • 2 tsp. Salt
  • 1/4 cup Vegetable Oil
  • 1 1/4 cup + 2 TBSP. Water
  • 2 TBSP. + 2 tsp. Additional water, if needed

Ingredients (centers):

  • 6 3/4 cup (1 lb. + 14 oz.) White Whole Wheat Flour
  • 6 1/4 cup + 2 TBSP. (1 lb. + 12 oz.) All Purpose Flour, enriched
  • 1 3/4 cup (4 oz.)
  • 3/4 cup (6 oz.) Sugar
  • 1/4 cup (2 oz.) Yeast, instant, dry
  • 1 TBSP. + 1 tsp. (1 oz.) Salt
  • 7/8 cup (7 oz.) Vegetable Oil
  • 1 qt. + 2 tsp. Water
  • 1/2 cup Additional water, if needed

Directions:

  1. Place flours, dry milk, sugar, yeast, and salt in mixer bowl.
  2. Blend with dough hook for ~ 2 minutes on low speed.
  3. Add oil and blend for ~ 2 minutes on low speed.
  4. Add water to the dry ingredients. If dough appears too stiff, add additional water (see above).
  5. Mix for 1 minute on low speed or until water is mixed in.
  6. Knead dough on medium speed for 8-10 minutes until dough is properly developed. (At 8 minutes, stretch the dough like a rope. If it breaks, continue to mix 2 additional minutes).

Serve:

1 portion = 1 oz. eq. grain
