Ingredients (homes):

  • 2 Tablespoons oil
  • 2 Tablespoons minced garlic
  • 24 ounces (by weight) peas and carrots, frozen, defrosted
  • 4 cups cooked enriched rice (or brown rice for whole grain)
  • 1/3 cup soy sauce (use tamari sauce for gluten free)
  • Choose one protein:
  • - 8 scrambled eggs
  • - OR 1 lb. 3 oz. (weight) cubed, precooked boneless ham
  • - OR 4 cups firm cooked and seasoned firm tofu

  • 3/4 cup oil
  • 1/4 cup + 2 tablespoons minced garlic
  • 9 pounds (by weight) peas and carrots, frozen, defrosted
  • 1 gallon + 2 quarts cooked enriched rice (or brown for whole grain)
  • 2 cups soy sauce (use tamari sauce for gluten free)
  • Choose one protein:
  • - 48 scrambled eggs OR 5 lb. 5 oz. (weight) liquid eggs
  • - OR 6 lb. 13 oz. (weight) cubed, precooked boneless ham
  • - OR 13 lb. 3 oz. (weight) cooked and seasoned firm tofu

Directions:

  1. Brown garlic in oil.
  2. Stir in veggies, rice and soy sauce. Cook until heated through.
  3. Serve 1/2 cup (#8 scoop) rice mixture to ages 1-5 and 1 cup (#4 scoop) to ages 6+.
  4. Cook/heat eggs, ham OR tofu. Serve the portions listed below.

Serve:

Serve to ages 1-2: 1 oz. (weight) ham OR 2 tablespoons (#30 scoop) eggs OR 1/4 cup (#16 scoop) tofu
Serve to ages 3-5: 1 1/2 oz. (weight) ham + 3 tablespoons (#20 scoop) eggs OR 3/8 cup (#10 scoop) tofu
Serve to ages 6+: 2 oz. (weight) ham + (#16 scoop) 1/4 cup eggs OR 1/2 cup (#8 scoop) tofu
