French Toast Casserole

Ingredients (homes):

  • 1/2 loaf (at least 8 oz.) French Bread, whole grain, cubed
  • 8 Eggs, large
  • 3 cup Milk
  • 1/4 cup Sugar, divided
  • 1 tsp. Vanilla
  • 2 TBSP. Margarine
  • 2 tsp. Cinnamon

Ingredients (centers):

  • 1 loaf (1 pound) French Bread, whole grain, cubed
  • 16 Eggs, large
  • 6 cup Milk
  • 1/2 cup Sugar, divided
  • 2 tsp. Vanilla
  • 1/4 cup Margarine
  • 1 TBSP. + 1 tsp. Cinnamon

Directions:

  1. Place bread cubes in greased baking dish(es).
  2. In a mixing bowl, beat eggs, milk, one quarter of the sugar, and vanilla.
  3. Pour over bread. Cover and refrigerate for 8 hours or overnight.
  4. Remove from refrigerator 30 minutes before baking. Dot with margarine.
  5. Combine remaining sugar and cinnamon; sprinkle over the top.
  6. Cover. Bake at 350 degrees for 45-50 minutes or until a knife inserted near the center comes out clean. Let stand 5 minutes. Cut into portions.

Serve:

1 portion = 1 oz. meat/meat alt. and 1/2 oz. eq. grain
