Italian Sausage & Peppers Over Rice (WG)

Ingredients (homes):

  • 2 1/2 pound Sweet Italian Turkey Sausage
  • 2 pound Pepper & Onion Strips, frozen
  • 6 cup (for 1/2 cup portion) Brown Rice, cooked

Ingredients (centers):

  • 5 pound Sweet Italian Turkey Sausage
  • 4 pound Pepper & Onion Strips, frozen
  • 12 cup (for 1/2 cup portion) Brown Rice, cooked

Directions:

  1. Preheat oven to 375 degrees. Place sausage pieces in center of the pan(s). Arrange vegetables on each end of the pan(s).
  2. Bake 35 minutes or until a food thermometer reads 165 degrees.
  3. Serve meat (2 oz.) and veggies (1/4 cup) over rice (1/2 cup).

Serve:

1 portion = 2 oz. meat, 1 oz. eq. whole grain serving and/or 1/4 cup vegetable.
