"It's In The Bag" Roast with Root Vegetables

Ingredients (homes):

  • 1 (1 pound) bag baby potatoes, cut in half
  • 1 (1 pound) bag baby carrots
  • 1 (1 pound) bag diced fresh sweet potatoes
  • 3 pounds trimmed boneless roast (pork or beef)
  • 1 packet EACH (0.7-1 oz. weight) ranch dressing mix, Italian dressing mix, and brown gravy mix
  • 2 cups water

Ingredients (centers):

  • 4 pounds baby potatoes, cut in half
  • 4 pounds baby carrots
  • 4 pounds diced fresh sweet potatoes
  • 12 pounds trimmed boneless roast (pork or beef)
  • 4 packets EACH (0.7-1 oz. weight) ranch dressing mix, Italian dressing mix, and brown gravy mix
  • 2 quarts water

Directions:

  1. Spray cooker/roaster with nonstick spray.
  2. Rinse vegetables and place on the bottom. Top with roast.
  3. Sprinkle seasonings on top. Pour water over seasonings.
  4. Cook until a food thermometer placed inside the roast reads 145°F, about 7-8 hours on low or 4-5 hours on high for a 5-quart slow cooker.

Serve:

1 portion = 2 ounces meat + 1/2 cup vegetable
