Kid-Friendly Chicken Nachos (WG)

Makes:

12 Portions


Ingredients:

  • 1 pound skinless/boneless chicken breast halves (chopped in small pieces)
  • 1 tablespoon vegetable oil
  • 1 (12 ounce) package whole grain corn tortilla chips
  • 1 (8 ounce) package shredded Mexican-style cheese
  • 1 cup fresh tomatoes (chopped into cubes)
  • Optional: guacamole, sour cream, salsa

Directions:

  1. In a bowl, stir together chicken and oil.
  2. Heat a skillet to medium heat and add chicken mixture.
  3. Cook, stirring often until chicken is no longer pink.
  4. Remove from heat and set aside.
  5. Preheat oven to 350 degrees.
  6. Spread a thin layer of tortilla chips in a 9x13 inch baking dish.
  7. Sprinkle half of the chicken, tomatoes and cheese over the tortilla chips.
  8. Repeat layers.
  9. Bake for 15 minutes or until nachos are heated through and cheese is melted.
  10. Optional: Serve with a dollop of quacamole, sour cream and salsa.

Serve:

Serve 1 portion "Kid-Friendly Chicken Nachos" to each 1-5 year old.
Serve 1 1/2 portions "Kid-Friendly Chicken Nachos" to each 6-12 year old.
