Maple-Roasted Sweet Potatoes

Ingredients (homes):
- 1/3 cup Maple Syrup
- 2 TBSP. Butter, melted
- 1 TBSP. Lemon Juice
- 1/2 tsp. Salt
- 1/4 tsp. Pepper
- 2 1/2 pound Sweet Potatoes, peeled diced
Ingredients (centers):
- 2/3 cup Maple Syrup
- 1/4 cup Butter, melted
- 2 TBSP. Lemon Juice
- 1 tsp. Salt
- 1/2 tsp. Pepper
- 5 pound Sweet Potatoes, peeled diced
Directions:
- Mix all ingredients except potatoes. Toss potatoes in sauce.
- Bake at 400 degrees on greased or foil covered sheet pan(s) for 45-50 minutes or until golden brown.
Serve:
1 portion = 1/2 cup vegetable
