Ingredients (homes):

  • 1 (16 ounce) bag mixed vegetables, frozen
  • 1 (15 oz.) can/jar spaghetti sauce
  • 8 fluid ounces water (about 1 cup)
  • 1 (10.5 oz.) can broth (use vegetable for vegetarian)
  • 1 (16 oz.) can baked beans, vegetarian
  • 1 (15.5 oz.) can kidney beans
  • 56 grams (weight) enriched macaroni, dry

Ingredients (centers):

  • 7 pounds (weight) mixed vegetables, frozen
  • 1 (106 oz.) can/jar spaghetti sauce
  • 56 fluid ounces water (about 7 cups)
  • 2 quarts + 1 1/4 cups broth (use vegetable for vegetarian)
  • 1 (108 oz.) can baked beans, vegetarian
  • 1 (108 oz.) can kidney beans
  • 14 ounces (weight) enriched macaroni, dry

Directions:

  1. Place all ingredients in a pot(s).
  2. Bring to a boil. Reduce heat. Cover.
  3. Simmer until pasta is cooked through, about 20-25 minutes for a 3 quart pot.

Serve:

1 cup = 1.5 oz. eq. meat alternate + 0.25 oz. eq. grain + 3/8 cup vegetable.
