Ingredients (homes):

  • 2 (24 oz.) can Spaghetti Sauce
  • 8 oz. Lasagna Noodles, dry, enriched or whole grain
  • 2 cup (8 oz.) Mozzarella Cheese, shredded
  • 1 (16 oz.) carton Cottage Cheese
  • 1 (5 oz.) package Pepperoni (All meat or CN)
  • 3/8 cup Parmesan Cheese

Ingredients (centers):

  • 1 (106 oz.) can Spaghetti Sauce
  • 1 pound 2 oz. Lasagna Noodles, dry, enriched or whole grain
  • 1 pound 2 oz. Mozzarella Cheese, shredded
  • 2 pound 4 oz. Cottage Cheese
  • 12 oz. Pepperoni (All meat or CN)
  • 1 cup + 2 TBSP. Parmesan Cheese

Directions:

  1. Spread 1/4 of the sauce in the pan(s).
  2. Place 1/3 of the noodles on top.
  3. Layer 1/3 of the mozzarella, cottage cheese and pepperoni.
  4. Repeat steps 1-3, ending with a layer of sauce on top.
  5. Sprinkle with Parmesan.
  6. Cover with foil. Refrigerate overnight to soften noodles.
  7. Bake at 400F for 1 hour (for a 9x13" pan). Remove foil.
  8. Bake until a food thermometer reads 165F, about 30 minutes more
  9. Cool for 10 minutes before cutting.

Serve:

1 portion = 1 1/2 oz. meat/alt., 1/2 oz. grain and 3/8 cup vegetable.
