Sheet Pan Pancakes

One (13 x 18") Sheet Pan

Ingredients (homes):

  • 4 cups (17 ounces) Pancake/Baking Mix, whole wheat
  • 4 Eggs, large
  • 2 cups Milk
  • 1 teaspoon Vanilla

Ingredients (centers):

  • 8 cups (34 ounces) Pancake/Baking Mix, whole wheat
  • 8 eggs, large
  • 4 cups milk
  • 2 teaspoons vanilla

Directions:

  1. Coat pan(s) with nonstick spray.
  2. Preheat oven to 425 degrees.
  3. Whisk all ingredients together.
  4. Pour into prepared pan(s). If desired, sprinkle with toppings like blueberries, strawberries, or peaches.
  5. Bake until light brown and/or set, about 20 min. for a 13 x 18" sheet pan.

Serve:

1 square = 1/2 oz. eq. serving whole grain
Serve 2 squares to each child age 6+.
