Ingredients (homes):

  • 8 Tortillas, whole wheat, 10-12 inch
  • 12 ounces Cheese, Monterey Jack, shredded
  • 12 ounces Cheese, Cheddar, shredded

Ingredients (centers):

  • 16 Tortillas, whole wheat, 10-12 inch
  • 1 pound 8 ounces Cheese, Monterey Jack, shredded
  • 1 pound 8 ounces Cheese, Cheddar, shredded

Directions:

  1. Place 6 tortillas along the edges of a half sheet pan, so that half of each tortilla hangs off the sides.
  2. Place one tortilla in the center.
  3. Top with cheese.
  4. Place 1 tortilla in the center. Fold tortillas over the top so all the cheese is covered.
  5. Bake at 425F until tortillas are browned and cheese is melted, about 18-20 minutes.

Serve:

1 slice to count as 2 ounce meat alternate + 1 ounce equivalent grain
