Single Serve French Toast Casserole (WG)
Makes:
1 Portion
Ingredients:
- 1/2 Banana, ripe, mashed
- 1 Egg, large
- 1 TBSP. Milk, 1% low fat
- 1 (1 oz.) slice Bread, whole grain-rich, cubed, torn into pieces
- 1/4 cup Blueberries
- Cinnamon, a pinch
Directions:
- Coat a microwave safe mug with nonstick spray.
- Mix banana, egg and milk with fork.
- Stir in bread cubes, blueberries and cinnamon.
- Microwave until egg is cooked and a food thermometer reads 160 degrees, about 90 seconds. Watch carefully! If the bread rises over the mug, pause and then microwave in short 10 second bursts until cooked through.
Serve:
1 portion= 2 oz. meat alt., 1 oz. eq. serving whole grain (WG), and/or 1/2 cup fruit
