Southwest Chicken Chili

Ingredients (homes):

  • 1 cup broth, chicken/vegetable
  • 1 pound chicken chunks, cooked
  • 3 (14 oz.) cans northern beans, drained
  • 16 ounces salsa
  • 1/8 teaspoon ground black pepper
  • 1 cup (4 oz.) natural cheese, shredded

Ingredients (centers):

  • 7 cups broth, chicken/vegetable
  • 7 pounds chicken chunks, cooked
  • 2.75 (110 oz.) cans northern beans, drained
  • 1 (106 oz. can) salsa
  • 1 teaspoon ground black pepper
  • 1 lb. 14 oz. natural cheese, shredded

Directions:

  1. Place all ingredients except cheese into a pot or crock pot.
  2. Heat to 165 degrees F, about 1-2 hours on high for a 3 quart crock pot.
  3. Sprinkle cheese on top (about 2 T.) before serving.

Serve:

1 cup counts as 2 ounces meat/meat alternate + 1/2 cup vegetable.
