Vegetarian Baked Beans

Ingredients (homes):

  • 1 pound Navy Beans, dry, rinsed, discard any bad or discolored beans
  • 1/2 cup Onion, minced
  • 1 cup Brown Sugar
  • 1/4 cup Molasses
  • 1 TBSP. Liquid Smoke
  • 1 TBSP. Dijon Mustard, prepared
  • 1/4 cup Maple Syrup
  • 1/2 cup Ketchup

Ingredients (centers):

  • 2 pound Navy Beans, dry, rinsed, discard any bad or discolored beans
  • 1 cup Onion, minced
  • 2 cup Brown Sugar
  • 1/2 cup Molasses
  • 2 TBSP. Liquid Smoke
  • 2 TBSP. Dijon Mustard, prepared
  • 1/2 cup Maple Syrup
  • 1 cup Ketchup

Directions:

  1. Place beans in a crock pot. Cover with water. Cook on high until tender, but not mushy, about 10 hours.
  2. Drain off water. Add remaining ingredients. Cook on low until heated through, about 1 hour longer.

Serve:

1 Portion (1/4 cup) = 1 oz. meat alt. OR 1/4 cup vegetable serving.
